Pancit Bihon is a Filipino noodle dish, cooked with various vegetables and meats.

Ingredients:
– 1 tbsp vegetable oil
– 500g boneless, skinless chicken breast
– 2 cloves garlic
– 1 small onion
– 250g rice noodles
– 1 1/2 cups mixed vegetables (carrots, cabbage and green beans, scallions)
– Salt and pepper, to taste
– 2 cups low sodium chicken broth
– 4 tbsp soy sauce
– 1 tbsp oyster sauce
– 1 tsp sugar
– Lemon wedges

Cooking Instructions:
1. In a large pan over medium heat, cook chicken with oil until tender. Transfer to a plate and set aside.
2. Add chopped garlic and onion and cook for 2 minutes.
3. Add cooked chicken and season with salt and pepper.
4. Stir in the veggies and cook until a little tender.
5. Add all the ingredients for the pancit sauce (chicken broth, soy sauce, oyster sauce and sugar) and bring to a boil.
6. Add rice noodles and stir until all the noodles are coated with the sauce.
7. Cook until the noodles are tender (3-4 minutes), stirring frequently.
8. Season with salt and pepper.
9. Serve immediately with lemon wedges.

Gyoza are pan-fried Japanese dumplings.

Ingredients:
– 20 gyoza wrappers
– 200g shrimp
– 1/2 onion
– 1 tbsp soy sauce
– 1 tsp ginger paste
– 1 tbsp potato starch
– Salt and pepper, to taste

Cooking Instructions:
1. Finely chop an onion and shrimps into small piece.
2. Mix with other ingredients and wrap in gyoza wrappers.
3. Fry until golden brown.
4. Pour 2 tbsp of water into a frying pan, put the lid on and steam for 2-3 minutes.
5. Serve warm.

Branzino Mediterranean, also known as Mediterranean sea bass, is a delicious, yet easy Greek dish.

Ingredients:
– 2 tbsp olive oil
– 2 whole sea bass
– 1 red onion
– 1/2 lemon
– 2 sprigs rosemary
– 1/2 cup white wine
– 1/4 cup lemon juice
– 1 tbsp oregano
– 1/4 cup parsley
– Salt, pepper, to taste

Cooking Instructions:
1. Preheat oven to 325F.
2. Drizzle 1 tbsp olive oil into a large baking pan.
3. Add half of a sliced onion and season with salt and pepper.
4. Place the cleaned fish stuffing each cavity with 1 lemon wedge, 1 rosemary sprig, and some of the red onion.
5. Pour white wine and lemon juice over each fish and sprinkle with oregano.
6. Drizzle the remaining 1 tbsp olive oil over the fish.
7. Bake until the fish is opaque and flakes easily with a fork, about 25 minutes.
8. Remove all the bones.
9. Garnish with parsley and lemon wedges.

Arakas Latheros is a Greek main dish with peas cooked in a tomato sauce.

Ingredients:
– 3 tbsp olive oil
– 6 spring onions
– 500g green peas
– 1 can tomatoes
– 1 potato
– 1/3 cup dill
– 1/2 cup water
– Salt, pepper, to taste

Cooking Instructions:
1. Cook onions with olive oil over medium heat until soft.
2. Add peas, crushed canned tomatoes, sliced potato, chopped dill, salt and pepper.
3. Add water if there is not enough tomato juice.
4. Stir thoroughly and bring to a boil.
5. Cook over low heat for 30 minutes or until peas and potato are soft.
