Salo is a cured pork fat, which is usually eaten on its own as a snack with some rye bread and horilka (Ukrainian alcoholic beverage) or is accompanied by borscht. It is one of the most popular Ukrainian dishes.

Ingredients:
– 1kg pork belly or pork fat
– 2 cups salt
– 1 tsp paprika
– 1/2 tsp coriander
– 1 tsp black pepper
– 2 bay leaves
– 3 garlic cloves

Cooking Instructions:
1. Break the bay leaves into tiny pieces. Mix them with coriander, black pepper, and 1 tbsp of salt and grind using mortar and pestle. Add the paprika and 1/2 cup salt, and mix everything well.
2. Slice the garlic and mix it with the thyme and 1 tsp of salt.
3. Cut the pork into four blocks.
4. Roll every piece of pork belly in garlic and coriander mixtures.
5. Put the pork into the glass container on top of the remaining salt.
6. Cover the containers and let the pork cure for two days in a fridge.
7. Wash the salt rub under cold water and dry the salo with paper towels.
8. Place the salo into new, dry containers covered with paper towels and let it mature for 10-14 days.
9. Take out the salo, serve it, and enjoy.

Canadian Cocktail is an alcoholic drink made with Canadian whisky.

Ingredients:
– 45ml Canadian whisky
– 15ml orange liqueur
– 15ml lemon juice
– 1 tsp simple syrup
– 1 dash bitters

Cooking Instructions:
1. Fill a cocktail shaker with ice.
2. Pour the whisky, liqueur, juice, syrup, and bitters over the ice.
3. Shake well.

Oatmeal Pie is a delicious Mennonite dessert. It’s sweet and crunchy. This recipe is a variation of the one found in the Sonnenberg Mennonite Church Centennial cookbook.

Ingredients:
– 115g butter
– 1/3 cup white sugar
– 1/3 cup brown sugar
– 1/2 cup dark corn syrup
– 1/2 cup maple syrup
– 1/2 tsp cinnamon
– 3 eggs
– 3/4 cups old fashioned oats
– 3/4 cups coconut flakes
– 1/2 cup milk
– 1 pie crust

Cooking Instructions:
1. Pre-hear oven to 350 degrees.
2. Cream softened butter and sugar, adding cinnamon, corn syrup and maple syrup.
3. Beat in eggs, one at a time. Mix well.
4. Add milk, oatmeal and coconut flakes.
5. Pour the filling into a chilled pie crust.
6. Bake for approximately 1 hour, until golden brown.

Mojito is a world-famous cocktail, originated in Havana, Cuba. It’s made of 5 simple ingredients: white rum, sugar cane juice or white sugar, lime juice, soda water and mint.
Mojito is considered to be the most popular rum-based highballs.
To make a mojito, fresh lime juice is added to mint leaves and sugar cane juice or white sugar. Then this mixture is muddled until mint leaves release the essential oils. After this, the rum is added to the sweet lime-mint mixture, briefly stirring to dissolve the sugar. Finally, crushed ice and sparkling sods water are added. For garnish, mint leaves and lime wedges are used.
There are several variations of Mojito. For example, strawberry mojito made with muddled strawberries, Rose Mojito made with rose-flavored spirit, Virgin Mojito or Nojito made without alcohol, Mojito de toronja made with grapefruit, Mojito de maracuyá made with passion fruit, Mojito Blanco made with tequila instead of rum, etc.
