Oatmeal Pie is a delicious Mennonite dessert. It’s sweet and crunchy. This recipe is a variation of the one found in the Sonnenberg Mennonite Church Centennial cookbook.

Ingredients:
– 115g butter
– 1/3 cup white sugar
– 1/3 cup brown sugar
– 1/2 cup dark corn syrup
– 1/2 cup maple syrup
– 1/2 tsp cinnamon
– 3 eggs
– 3/4 cups old fashioned oats
– 3/4 cups coconut flakes
– 1/2 cup milk
– 1 pie crust

Cooking Instructions:
1. Pre-hear oven to 350 degrees.
2. Cream softened butter and sugar, adding cinnamon, corn syrup and maple syrup.
3. Beat in eggs, one at a time. Mix well.
4. Add milk, oatmeal and coconut flakes.
5. Pour the filling into a chilled pie crust.
6. Bake for approximately 1 hour, until golden brown.
