NAME: Breakfast Burrito “Muffins”

TOTAL TIME: 35 mins

PREP: 10 mins

COOK: 25 mins

SERVES: 4-6 people


  • 8 eggs
  • 14 cup milk
  • Shredded cheese (your choice)
  • 3 large flour tortillas
  • Toppings of choice
  • ex: sausage crumbles, diced ham, veggies (spinach, red pepper, etc)




Preheat oven to 350°F

Beat together eggs and milk

Quarter flour tortillas and press into muffin pans to create “cups”

Add 1-2 Tablespoons of toppings

Pour egg mixture on top of toppings, tortilla cup

Top with 1-2 Tablespoons shredded cheddar cheese

Bake covered for 20 minutes, uncovered for another 5 minutes, to be a little crisp; if you prefer soft burrito muffins, bake covered for the entire 25 minutes, until egg is baked all the way through.

These can also be frozen after baked and cooled and reheated again for an easy and delicious breakfast
